Pandan Huat Kuih is a pandan flavored steamed cake. The Huat Kuih recipe I shared in my earlier post was made using coconut milk and fruit salt. This time I share a different Huat Kuih recipe and pandan juice is used as flavoring and coloring agent. This is a recipe I get from my auntie during my visit to malacca. For the size, I decided to make it a mini huat kuih so I used the cup cake paper case to steam my Huat Kuih. However, this is personal preference. You can always make it in different size. This is really a very simple recipe. I hope you like my pandan huat kuih recipe and do try it out. Enjoy!
Pandan Huat Kuih Recipe
Ingredients: - 250 grams self raising flour.
- 1/2 teaspoon baking powder.
- 100 grams castor sugar.
- 1 large egg.
- 45 grams corn oil.
- 200 ml pandan juice (blend 6 pieces of pandan leaf with 200 ml water).
Methods: - Mix self raising flour and baking powder then sift the flour. Set aside.
- Combine sugar and pandan juice in a mixing bowl. Whisk till sugar is dissolved.
- Add in egg and corn oil into pandan juice mixture and whisk to mix well.
- Fold in flour in batches and mix well.
- Spoon the mixture into the cup cake paper cases until they are 80% full.
- Steam for about 20 minutes or until cook.
