Pandan Huat Kuih is a pandan flavored steamed cake. The Huat Kuih recipe I shared in my earlier post was made using coconut milk and fruit salt. This time I share a different Huat Kuih recipe and pandan juice is used as flavoring and coloring agent. This is a recipe I get from my auntie during my visit to malacca. For the size, I decided to make it a mini huat kuih so I used the cup cake paper case to steam my Huat Kuih. However, this is personal preference. You can always make it in different size.  This is really a very simple recipe. I hope you like my pandan huat kuih recipe and do try it out. Enjoy!

Pandan Huat Kuih Recipe

Ingredients:
  1. 250 grams self raising flour.
  2. 1/2 teaspoon baking powder.
  3. 100 grams castor sugar.
  4. 1 large egg.
  5. 45 grams corn oil.
  6. 200 ml pandan juice (blend 6 pieces of pandan leaf with 200 ml water).

Methods:

  1. Mix self raising flour and baking powder then sift the flour. Set aside.
  2. Combine sugar and pandan juice in a mixing bowl. Whisk till sugar is dissolved.
  3. Add in egg and corn oil into pandan juice mixture and whisk to mix well.
  4. Fold in flour in batches and mix well.
  5. Spoon the mixture into the cup cake paper cases until they are 80% full.
  6. Steam for about 20 minutes or until cook.
