I would never eat bitter gourd when I was a kid because I don’t like it’s bitter taste. Even the adult don’t like the bitter taste. I would say bitter gourd is very much an acquired taste dish. You must learn to appreciate the taste. Now I have since grew to love it. Today, I will be sharing with you the fried bitter gourd with egg recipe. This is a classic Chinese home-cooked dish.

Sometimes I like to make this dish and serve it with just a bowl of porridge as my lunch. It is a simple lunch and yet so satisfied.

In fact, bitter gourd is a very healthy vegetable and high on nutrition. It is a rich source of vitamin and mineral. Bitter gourd is also great for diabetes because it has the anti-diabetic properties in it. [source]

If you want to reduce the bitterness of the bitter gourd, you can rub some salt on the halved bitter gourd and leave it for about 5 minutes. Then rinse it with water before cut it into slice. When slicing, make sure you slice it into very thin pieces. Personally, I found it taste better in thin slice than the thick slice.

Alright, let’s head over to the ingredients and get started to make the fried bitter gourd with egg. Happy cooking! 🙂

Fried Bitter Gourd with Egg Recipe

  • 200 g bitter gourd
  • 30 g carrot. Cut into strips.
  • 1 tablespoon of cooking oil
  • ¼ teaspoon of salt

  • 2 eggs
  • 1 pinch of salt
  • 2 dashes of white pepper powder
  • 2 drops of sesame oil

  1. Cut bitter gourd into half (length-wise) and remove the seeds. You can use a spoon to do that.
  2. Rup small amount of salt to the halved bitter gourd. Leave it for about 5 minutes, then rinse away the salt with water. This step is to reduce the bitterness of bitter gourd. If you enjoy the bitterness then you can omit this step.
  3. Now, slice the bitter gourd into very thin slice. Personally, I feel that it taste better in thin slice.
  4. In a small bowl, add in all the ingredients B. The beat the eggs for about one minute so that it mix evenly. Set aside.
  5. Heat up one tablespoon of oil in wok. Add bitter gourd slices and a pinch of salt. Stir fry over high heat for about 2-3 minutes until almost cooked (turning slightly translucent).
  6. Pour the beaten egg slowly over the bitter gourd slices. Stir fry until the egg is cooked and dry. Dish out and serve hot with a bowl of porridge or rice. Personally, I prefer porridge than rice.
