Fried Kuey Teow noodle recipe. In my previous blog, I wrote about the sambal belacan recipe. This suddenly made me so craving of the fried kuey teow noodle. It is really best to eat the fried Kuey Teow noodle with the sambal belacan. I am always a noodle lover. I like to try different ways to cook noodle.

Fried kuey teow noodle is an easy dish to prepare with simple ingredients. In this recipe I only use yellow noodle, kuey teow (flat noodle), bean sprouts, scallion, fish cake and egg. If you like you can add some prawns, pork or chicken meat. For me I just want to make it simple and nice. As for the seasoning, once you know the recipe you can always adjust it to suit your taste. It’s personal preference. OK, let’s see how to make the fried kuey teow noodle. Enjoy!

Fried Kuey Teow Noodle Recipe

Ingredients:
  1. 250 grams yellow noodle
  2. 250 grams kuey teow / flat noodle
  3. 50 grams bean sprouts
  4. 1 piece of fish cake (sliced)
  5. 2 stalks scallion (cut into section length)
  6. 1 egg
  7. 1 clove garlic (diced)
  8. 2 tablespoons cooking oil

Seasoning:

  1. 1 tablespoon dark soy sauce
  2. 1 tablespoon light soy sauce
  3. 1/2 teaspoon fish sauce
  4. 1 tablespoon oyster sauce

Methods:

  1. In a small mixing bowl, mix all the seasoning ingredients. Set aside for later use.
  2. Heat up a wok with 2 tablespoons cooking oil.
  3. Add egg and scramble until it is just cooked. Now, add garlic and stir fry to fragrant.
  4. Put in fish cake, yellow noodle and kuey teow and do a quit stir fry for 1 minute.
  5. Add seasoning and continue to stir until the noodles are well blended with the seasoning and completely cooked through.
  6. Add bean sprouts and scallion and do a few final stirs, dish out and serve hot.
