Dorayaki is a traditional Japanese confectionery filled with sweet red bean paste. If you are fan of Japanese famous cartoon, Doraemon, you probably know this desert is his favorite snack. This traditional japanese cake is commonly filled with red bean paste, however, you can use other filling base on your preference. Kaya, custard/pastry cream and fruit jam are popular choices. Dorayaki Recipe
Ingredients: - 128 grams eggs (about 3 eggs)
- 155 grams sugar
- 194 grams Plain flour
- 4 grams baking powder
- 4 grams baking soda
- 93 grams fresh milk
- 15 grams honey
- 8 grams butter (melted)
Methods: - In a small bowl, combine fresh milk, butter and honey and mix well. Set aside.
- In a large bowl, combine eggs and sugar and whisk well until the mixture becomes fluffy.
- Sift plain flour, baking powder and baking soda into egg mixture and mix all together. The batter should be slightly sticky now.
- Stir in fresh milk, butter and honey mixture into batter and mix well.
- Keep in the fridge to rest for 1 hour.
- Heat a non-stick frying pan over low heat. Dip a kitchen towel with some oil and coat the pan with oil and then remove the oil completely. This is the key for evenly golden brown dorayaki surface.
- Use a ladle to pour the batter from above the frying pan to create 8 cm diameter pancakes.
- When you see the surface of the batter starting to bubble, flip over the pancake to cook the other side for another 30 seconds. Then transfer to a plate. Continue making the pancakes for the rest of batter.
- You may serve the pancakes with some filling like red bean paste, kaya, custard/pastry cream or fruit jams.
