Century Egg and Salted Egg Porridge

During the weekend, I like to eat “Dim Sum” at the restaurant near my house. “Dim Sum” is a style of Chinese food prepares as small bite-sized or individual portions of food traditionally served in small steamer baskets or on small plates. Besides “Dim Sum”, porridge is usually served. I like porridge, especially century egg and salted egg porridge. Pork or minced pork is usually add to the porridge too.

Last weekend, I went to market to get all ingredients for the porridge. I decided to cook my own version of century egg and salted egg porridge. It is actually a very simple and easy dish to prepare. All you need are century egg, salted egg and minced pork. I also add some fried dried silver fish and shallot oil as condiment. Without further ado, let’s see how to cook this yummy porridge. Century Egg and Salted Egg Porridge Recipe

Serving for 2 to 3 persons.

Ingredients:
  1. 1/4 cup rice
  2. 1 century egg, diced
  3. 1 salted egg, diced
  4. 2 tablespoon shallot oil
  5. 1 tablespoon dried silver fish, rinsed and fried
  6. 100 grams pork, minced
  7. 1 little water
  8. 1 teaspoon salt (or to taste)
  9. dashes of white pepper powder to taste
  10. 2 corianders for garnishing, cut into small sections

Methods:

  1. Put the rice into a small pot and rinse with cold water a few times until water become clear.
  2. Add 1 little of water into the rice and bring it to boil on medium heat.
  3. Lower the heat to simmer and cover the pot. Let it cook for about 15 to 20 minutes or until your desired texture.
  4. Add minced pork, century egg and salted egg to the porridge. Stir a few times, and let cook for about 2 to 3 minutes or until minced pork cooked completely.
  5. Add salt to taste.
  6. Lastly, garnish with some corianders and serve hot with some white pepper powder, shallot oil and fried dried silver fish.
