Lotus Root With Red Dates Soup (莲藕汤)


Lotus root with red dates soup is a very delicious and nourishing Chinese home-cook soup. It is nutritious and easy to cook with simple ingredients. Lotus root is effective in expelling heat, nourishes the body, cools the blood, eliminates bruise, improve appetite and stops diarrhea. While red date is a traditional Chinese medicine with blood-nourishing properties. It is widely used in cooking soup. Dried octopus is a good ingredient to braise soup as it enhances the flavour of the soup. It is octopus is rich in calcium, phosphorus and iron. Lotus Root With Red Dates Soup Recipe

Ingredients:
  1. 500 grams lotus roots
  2. 10 red dates
  3. 2 dried octopus
  4. 150 grams dried peanuts
  5. 500 grams pork ribs
  6. salt to taste
  7. 1.5 litres water

Methods:

  1. Boil 1.5 litres water in a pot with high heat. When boiled, add all ingredients except salt.
  2. Bring the soup to boil again with high heat and then reduce to low heat and simmer for 2 hours.
  3. Lastly, add salt to taste base on personal preference. Remove from heat and serve hot.
